conservation of Lactic acid bacteria (LAB) and probiotic Bifidobacteria. The cold energy and the low temperature of liquid nitrogen allow fast freezing, with minimal damage, so that they survive the freezing process.
Cultures or probiotics for inoculation are often distributed under the form o
